Ravi Nagubadi | Art of Dosa

 

With Art of Dosa in Revival Food Hall, Ravi Nagubadi is on a one-man quest to elevate the profile of dosa, a delicacy from South-India, in the United States.


The traditional masala dosa is a thinly spread, fermented batter of rice and lentils cooked to a crisp on a griddle and filled with potato curry and cabbage, and served with coconut chutney and a lentil-vegetable soup called sambar. Nagubadi learned how to make dosa from his mother, and he has added a modern spin with dosas that incorporate American, Mexican and East Asian ingredients.


The rest of the menu, which is 100% vegan and gluten- and nut-free, also includes vegetable biryani, soups and plant-based ice creams and shakes with South Indian ingredients.


After starting as a festival vendor, Nagubadi moved to a ghost kitchen and, in late December 2019, opened his stall at Revival. During the COVID-19 pandemic, he operated out of a commissary for delivery and takeout while also donating 4,000 meals daily for frontline healthcare workers.
